In a bowl, combine eggs, salt, and sugar (if making sweet blini). Mix well with a whisk.

Pour in approximately half of the milk (about 350 ml) and mix.

Gradually add the flour and stir until a smooth, thick batter without lumps is formed.

Pour in the second half of the milk and mix well again. The batter will become thinner.

To 300 ml of freshly boiled water, add 1 teaspoon of baking soda. The mixture will start to fizz.

Immediately pour this hot water with soda into the batter and mix well.

Add 3 tablespoons of vegetable oil and mix one more time. The batter is ready.

Heat a frying pan well. Pour a small amount of batter and spread it in a thin layer. Fry the blini until golden brown on one side, then flip and cook until done.
