    Let's prepare the necessary ingredients for syrniki with tvorog and ricotta.

    Separate the yolks from two eggs.

    Place ricotta and tvorog into a spacious bowl.

    Add the yolks, sugar.

    Mix all ingredients with a spoon until a soft, homogeneous mixture is obtained.

    Add flour, baking powder, and mix everything again with a spoon. The soft tvorog dough is a bit sticky, so when working further, moisten your fingers with cold water.

    Lightly dust the work surface with flour and place all the tvorog dough mass on it. Roll it into a log with your hands and cut it into equal pieces with a knife.

    Now form syrniki blanks from all the pieces of dough. I use a glass with a flat bottom for shaping. First, gently press a piece of dough with the bottom, then cover it with the glass and, using circular motions of the glass, even out the sides of the blank – you get very neat "pucks".

    Heat vegetable oil in a frying pan over medium heat and place a batch of syrniki blanks, fry first on one side until a golden crust appears.

    Then flip the syrniki to the other side with a spatula and fry until golden brown as well.

    Be sure to cool the finished syrniki with tvorog and ricotta, serve them with your favorite topping; I like these syrniki with sour cream.
